I can setup an ssd with my laptop and when setup, plug it into my headless server and everything works fine.

Yea, went the other way to OpenSuse Leap and have a tumbleweed, Fedora and arch distrobox. Distrobox is such a helpful tool.
Just use emacs with evil-keybindings and you get the best of both worlds
